This should clue you in that you're about to enter the cult of the chile, and these people like their chiles. You'll figure that out when they bring your chips and salsa (along with a pitcher of water). Its very hot, and I have a tolerance to the effects of the capsaicin in chiles. I always get the machaca burrito. Its hot, too. Fortunately the plate I order comes with a side of sour cream, which definitely dulls the effects of chiles (hint: capsaicin is insoluble in water, so that pitcher does less good than a good dollop of cream). The beans are somewhere between mashed and whole, and are silky in texture. They taste good, too. Beware the margaritas: theyre extra strong. Bring a sober friend.
