I had a craving for Mexican food and decided to go to Chevy’s Fresh Mex. After being seated in a timely manner, I was introduced to one of my favorite snacks, chips, and salsa. I indulged myself with fresh, warm, and crunchy chips; complimented with mild chipotle style salsa, infused with crisp, ripe tomatoes, and onion. Every scoop full had a defined flavor that kept me going back for more.
Now that I was full with chips and salsa, I glanced at the menu. After that one glance, I knew what I wanted. “Braised pork simmered with onions, garlic, poblano and jalapeno peppers, savory herbs and spices. Served on a bed of Fresh Mex rice and black beans with fresh tomatillo green sauce and sour cream; Chile Verde.” Now coming directly from the menu its sounds like something you can just sink your teeth into. But it’s much more than that.
A steaming hot white bowl was placed in front of me. In it was the masterpiece that is Chile Verde. A bed of fresh, moist Mexican rice, on top of that cooked to perfection Cuban black beans. Cavaliered by the braised pork, so tender it melts on the tongue, so flavorful the taste buds dance. Rounded off with the cool mild yet spicy green sauce, flavorful and yet nothing without its accompanied counterparts.
The night was a success, by that time I was completely stuffed. Seeing that there was a bit left in the bowl, I reluctantly threw in the napkin. That night I took home a piece of that masterpiece, one for me to enjoy again the next day. All in all, I give the night two thumbs up, making it one of my most memorable Mexican food experiences yet.
