Matisse is a gem of midtown east featuring a real chef, on property. This is a small, intimate restaurant that has quickly built a stable and strong following. Reservations are recommended.
The food is, without question, exceptional; prepared under traditional French standards, by a chef who is not just meticulous, but also flexible and dynamic; able to articulate the preparation in concert with a patron's special request. As example, the veal skirt steak was perfect in every way and arrived this way after the chef generously adapted to our request that it be prepared in olive oil, not butter. (This is VERY big for a French chef). We also enjoyed the 7-hour lamb, Hangar Steak and Saut?ed Salmon.
The tapas-type hors-' devours that are featured are all delicate and carefully seasoned for appropriate flavor; they are perfect pairings with wine before the meal. The traditional French onion soup was as good, or better than we enjoyed in France, depending on place and region.
The wine-list is impressive; featuring boutique vineyards that offer tradition, quality and value for both red and white.
When it comes to desert, this is not the optimal place, at least not yet? Maybe they'll adjust the desert menu with lighter offerings?
If you are a Francophile and like your French cuisine traditional (butter, heavy and rich), or if you love France, but want your cuisine ""lite"", you will be very happy at Matisse, where all appetites are satisfied.
