Not even worth ? of 1/2 star.
Talked with Jan the owner. Guess what - it was my fault. I should have bought a 1/2 cow instead of a 1/4 cow. Silly me, we only have a brand new 9 cubic foot chest freezer (I should have paid another $500 for a 20 cubic foot one).
And istead of spending $855 for a 1/4 cow, I should have spent $1705 for a 1/2 cow. Then I could have gotten it cut the way I wanted it.
Stupid me for not knowing that. And bad on the rancher (according to Kelso) for not telling me that.
Seems Kelso could only cut my 1/4 cow in 1 inch thick steaks instead of 1 1/2 inch because the other buyer wanted 3/4 inch steaks. Never mind that Kelso actually cut my steaks between 3/4 and 7/8 inch.
Jan said it was only common sense and that I should have known. Well, after talking with her, I called Silvana meats. Nope, it seems they could cut 1/4 cow at 3/4 inch and the other 1/4 cow at 1 1/2 inch (just like they did for the 1/4 Dexter we bought last year).
So I am going to insist on Silvana as the butcher for our next 1/4 Angus (will still use Cascade Range in Monroe for our grass fed Angus). And yes, had I known that Silvana goes to Monroe at least once a month, I would have insisted Bob use them. And believe me, I have made that strong recommendation to him.
Don't use Kelso. If you don't like the taste of grass fed (can be gamier) or don't want to pay the extra cost, and you just want a couple of thick steaks, call Haggen or Top Foods the day before and their butcher will cut your meat to your specs and wrap it in butcher paper to avoid BPA. They have treated us great, which is more than I can say for Kelso.
Seems Silvana can accomodate differing customers where Kelso cannot, or will not.
So just don't go to Kelso. Because to error is human, but to blame the customer is bad, very bad customer service.
