The South is known for its soul food but nobody can do soul food like Calvin Green at Hot Foods by Calvin in Augusta, Ga. http://www.studio2g.com/hfbc/index.html Calvin was the head chef at couple of other restaurants in Augusta before he started his own place. But when he opened his on restaurant and word got out about the food most times you have to wait in line to get a seat there at lunch. When my mom was so sick in the hospital she told me the first thing she wanted when she got out was some of Calvin's collard greens. Well, a few weeks later, Mom was home but was still not well enough to go out. My husband and I were having lunch at Calvin's and Calvin came over to speak to us and make sure everything was alright. I told him Mom's story and when we went up to the register to pay for our meal there was a large order of collar greens and a bag of cornbread muffins waiting on us. The lady at the register told us Calvin said to take them to Mom and they were on the house. That's the kind of guy Calvin is and the food he cooks is all fresh and out of this world. I like the smothered chicken with rice and gravy, lima beans, fried okra, candied yams and cornbread with sweet tea to drink. The diet is out the window when you go to Calvins. Oh, and if you notice something called "Bean Pie" for dessert, it really is made from lentils and is out of this world. You would never know there was a bean in it if no one told you.
