The number one thing I miss about home, even more than the sun, is taco trucks. The feeling you get when driving around downtown Pasco is that there's probably 2 taco trucks to every resident which works out to roughly 1 taco bus per family. Your options are endless, but everyone ends up with a favorite and mine is Tacos La Diferencia (although to be fair, this is only after Tacos Mejor packed up and wheeled into the sunset with my heart in tow). Apparently, Tacos La Diferencia has moved into the abandoned building which was housed in their parking lot of choice and have created a real restaurant. I've yet to try it, but the truck version couldn't have served up a better tongue torta. I recommend ordering in Spanish if you can and don't forget your Jarritos!
