I am blown away that a restaurant owner would take the time to answer his reviews. I myself wrote two letters to two proprietors in PDX and they blew me off totally. This kind of concern reflects Roux's approach. While busy, the waitress was extremely pleasant and made good recommendations and explained things that needed explaining. The food was very good--I liked the pork and beans and the sausage combination. I regret sharing it with my dining partner as he didn't finish it. Soup was good but a little too rich for me personally because of a lot of butter on top. Only mistake was going nearby for dessert to a popular but mediocre dessert joint.
