Buffet veterans know that you will trade off quality for quantity in many cases. Minado's sushi is not quite as good as if you went to a standard Japanese restaurant, but if you have an enormous appetite, it makes up for it with tremendous variety and reasonably fresh offerings. They will make you handrolls on the spot, so I recommend doing that as much as possible, as opposed to taking your chances with what's out there. Avoid salmon, which seems to me to be obviously lower grade. Avoid the shrimp. I think they've been frozen, and they sit out there a fair amount. Try the udon noodle station, the hibichi, the salads and the crab legs. All are above average.
