From the moment you walk in the door, they've got their hand in your wallet. They add the gratuity to all checks so the waiter tries to pump the check by recommending the tasting menus (there are 3 of them) or offering to create a ""personalized tasting menu based on your preferences"" (translated: I will bring you the most expensive things on the menu in succession until you TELL me to stop). I felt like I was fighting with the waiter to avoid ordering a 6 course meal) the poor guy sitting one table over from me ended up with a $1300 check for 4 people because the waiter railroaded him into ordering the signature dishes and the ""special"" sushi and carafe of ""good"" sake (and it was good sake but it was very expensive). The room desperately needs remodeling. But otherwise the service was impeccable.
