I've never been to the main location, but I see the booth at the Santa Monica Farmer's Market all the time. The line was shorter than usual, so I jumped on it. It was very quick and easy to order, but then took nearly 30 minutes to get my crepe. Really? A paper-thin pancake?\r \r Since I had plenty of waiting time, I used it to observe the booth's operation policy. It appears that one person takes the orders and money, 4 or 5 people make the crepes and 1 person calls out the numbers of the orders to pick up. Sounds good in theory, however in practice, NOT SO MUCH. At any given time, there were between 6 and 10 finished crepes just sitting there waiting to be called and given out. Result: tons of people waiting around, after we've paid, watching our crepes sit on a warmer. Mine was SO DRY by the time I got it :-( I can't even imagine what it would be like when the line is long, like usual... Pros: maybe better at restaurant? Cons: Farmer's market booth a mess
