The owner of this place worked with Wolfgang Pucks head pizza chef and has captured that taste of Wolfgang plus many original creations. The restaurant only uses the much more expensive beef pepperoni and beef bacon. All of the ingredients are so so fresh and of high quality. I have spent over 20k eating at this place in the last 15 years. I am a hooked die hard fan. All the pizza is cooked right on the bottom of the wood fired oven. Most of the local places around here use a pan and a lot of oil in that pan. I swear the fat content of via via pizza must be 1/2 compared to Nicholas Pizza and others which i like also but i try to eat healthier and eliminate that extra oil . You can't find a crust anywhere in RI like Via Via's because of the wood fire. I just saw a recent review of Via Via at The Brown Herald just do a search for ""Via Via Brown Herald""
