Celebrated New Years here the other night and mouth was treated to a flavor fiesta matching the fireworks that would later ring in the New Year. Overall this was a great way to ring in the new year. The decor is a combination of rustic polish with the massive tequila bar serving as the centerpiece. The menu was filled with unique and wonderful combination of fresh and local ingredients that our table server was able to help us choose the best dish per our own palate. Started off with a signature margarita and freshly cooked warm tortillas with two different dipping sauces. Moved on to an order of guacamole and ceviche. Both were wonderful but the ceviche steals the show. For the main course my wife and I shared an order of fish tacos and braised pork shoulder. While the fish tacos looked simple they had a seasoned crust of spices that were wonderful, countered by a dollop of guacamole for a smooth finish. The pork shoulder was just about as perfect as possible with the meat tender and falling apart and the fig compote was heavenly. We finished the evening off with coffee/kahlua martini-ish drink and the chocolate cake. Both were wonderfully decadent. It turns out that Trebol offers cooking classes on the first Sunday of every month which we'll be attending soon. In closing it's the flavors that steal the show here leaving you wanting more. The prices are very reasonable for the quality of food you get. We'll be back very soon. Pros: Ceviche, Fish Tacos, Braised Pork Shoulder
