Some people believe Bar-b-q is an art form, others say it's a science. Carl Roper has a PhD in the art of Bar-b-q. A tiny 4 table storefront in a well worn St Louis neighborhood, Mr and Mrs Roper serve a technically perfect product. As a small operation he can personally select only the best meats from the most trusted suppliers and the finest spices and other ingredients which he applies at just the right times in the cooking process. Controlled temperature smoking over Missouri shag-bark hickory and a unique sauce complete the magic. They also serve excellent seafood dishes and, for a little adventure, tripe sandwiches and ""snoot."" Don't go expecting a romantic, candlelit dinner with your beloved; rather, go for a great eating experience. If you want ambiance, get your food ""to go,"" find a place to sit in the nearby riverview park (or your own comfortable home), and enjoy truly outstanding Bar-b-q. With some notice they will provide large quantities for your special event. My son and I visited during an August Bar-b-q road trip and it was the first place (including the BIG names in Kansas City) that served something better than we can make ourselves here in Colorado. Pros: Food, food, food, to die for Cons: no genteel amenities, well worn neighborhood
