The Bajio in Centerville (there are other locations, but we have not visited them) is amazing! Central Mexican cuisine (the ""Bajio"") has its own flavor, and we love it! Each selection starts with a fresh tortilla, cooked right in front of you, and then your order is filled by a series of friendly, fast staff who ask your choices of savory or sweet rice, three different bean concoctions, salsa varieties, and an assortment of condiments and additions, all while the main portion of your meal is assembled/cooked fresh right there. Every entree comes with beans and rice, except for the kid's meals, which just come with rice. There is a variety of taco, burrito, chimichanga, fajita, and quesadilla options, as well as some salad and soup choices. There's even a Mexican pizza option, and a new pork option. The kid's menu is basically a choice of a huge quesadilla, a taco, or a bean and cheese burrito. My kids always love the quesadilla, and it is really yummy (I sampled a bit)! My oldest just tried the burrito, and thought it was delicious. We always have leftovers because the meals are good-sized, even the kid's entrees. Something I always love as a special treat is the shrimp taco meal, which is smothered in mango salsa and sauteed in honey--you have to try it to see how yummy it is! Everything we've tried has been wonderful! The drinks are the basic cola/root beer/fruit drink selection, but you can get Apple Beer, which is a tasty non-alcoholic drink. The decor is very unique and well done (the rustically finished concrete floor even has some sort of large bird tracks imprinted in it!), and the music is fun and not too loud. You will wait longer to order on typically busy nights or lunchtimes, but the wait is never too bad. Great atmosphere, delicious food, family friendly, great for a date--what more could you ask for? Pros: Great atmosphere, yummy food, fast service Cons: Sometimes the staff is a little hard to understand, especially at busy times
