Living at the southern fringe of greater Denver civilization, you don't get too many good restaurants, and especially don't expect great sushi. But John Holly's is a great bistro to stop at late in the evening for some wonderfully creative and fresh sushi and sashima. Sitting at the sushi bar with a spouse or date is great fun, as the chefs crerate a constant stream of interesting sushi and are quite friendly, always trying to share a new taste or creation. We stop there after a movie, and it is a wonderful way to end an evening with some fine food and a great ambience. If you haven't tried sitting at a sushi bar late in the evening, try it at John Holly's.
