This restaurant has an excellent Itamai name: Steve. He knows how to make maki, nigiri, and sashimi like the other itamai in Japan. I have spoken to him in Japanese before and I bet His technic of cooking and creating the Japanese cuisines are similar to Tsukiji's Edo restaurant (higher than 5 star qualities of restaurants) in Japan. Their Fish is very cold, has that good taste of juice coming out from the meat of fish, The rice and mirin (rice vinagar) are well balance that you can taste the rice and vingar at the same time. I will recommend to anyone to go and try to eat at Omokase restaurant in Rancho Cucamonga, even to some people who lives far from Rancho.
