These ribs brought tears to my eyes - finally, the perfect ribs! I had the spare ribs and chicken breast combo, my wife had the tri-tip. All the meats were smoked just right Nice smoke flavor in the chicken, but it's easy to get chicken meat too smoky - not here, they know what they're doing.
Nothing is covered in sauce, the meat doesn't need it. That's a hallmark of great barbecue. They do include a side of sauce, and the sauce was excellent. Enough cayenne for some zing, not too hot, not too sweet, nice complex spicing.
Sides were good, not great - potato salad was fresh and OK; cole slaw was fresh, and had just a little of either the sauce or the rub added to it for flavor.
For breads you can choose from classic white bread, dinner roll, or cornbread. The cornbread is authentic southern style, and really good. White bread was, well, plain white bread - but very fresh.
The only downside, if you're not expecting it, is that there's no "restaurant", no building with A/C, no booths - it's just a kitchen with a smoker in a trailer. They do provide picnic tables, but you won't escape the Phoenix heat.
We're new in Phoenix, and we're avid BBQ fans. SOOO glad we found this place right away. I'll be back often! Maybe I'll get them to cater a party or two (yes, they cater!)
