The HIlton Waikoloa is a huge complex (62 acres), with a tram and a boat-carrying canal that traverse back and forth from one end of the resor to the other. There are 3 pools with waterfalls and slides and a swimming/snorkeling lagoon, 9 restaurants and a spa. They have dolphins and flamingos on display and, of course, acres and acres of breathtaking views. You literally never have to leave, if you don't want (and of course, since you're in the middle of nowhere, it might just be easier not to).
Of course, you're gonna pay through the nose for all these amenities. The kamaaina rates are great for those who are Hawaii residents, otherwise cash in those Hilton Hhonors points. Try to eat outside of the resort because all the restaurants are overpriced and just mediocre. Get a fridge (if you ask nicely, sometimes they'll give it to you for free) and save your leftovers for lunches and go to the store in Waikoloa Village (10 mins. drive) for breakfast munchies. Eat at Cafe Pesto in Kawaiahae, try the Beach Grill at the Waikoloa Beach Resort for lunch (it's too pricey for dinner and the desserts are awesome), Rainbow Cafe in Hawi, the Coffee Shack in Captain Cook and, if you're really desperate, Costco & Little Caesar's in the Kmart in Kailua-Kona.
