Living in Colorado, there are typically a lot of choices to be had in the Mexican food category. A lot of times, it can be easy to bypass the smaller, more interesting establishments in favor of going for the flashier, more slickly produced restaurants. However, if you pass up the original Efrain’s in Lafayette, you’ll be missing a wonderful experience. All of the basics are covered, from burritos to chimichangas to fajitas. There are a few new dishes as well, but the one that must not be missed are the Costillas. Take their excellent food, and combine it with truly reasonable prices and you’ve got a winning combination.
