As a vegetarian I hate to eat out. My husband and I were in town for three days on business and after driving around Colorado Springs we settled on Caspian Cafe. After eating there once we decided that there wasn't any reason to eat anywhere else. I've never had so many tasty things to choose from. Every time we ate there we tried something else and everything we had was delicious. The staff was friendly, the decor is lovely (artistic rather than your typical boring cookie cutter restaurant decor) and there was even a pretty belly dancer once night. I frequently accompany my husband on business trips and we've stayed at a few 5 star hotels in the US. IMHO the food at Caspain was better than all of them. I loved the food because of the interesting spices, the variety, it seemed fresh, healthy and it wasn't drenched in fat the way so much food seems to be. Some of the choices were pricey (and worth it) but I ordered a delicious quick lunch for $11 (including tip). I have no idea why this place wasn't packed, maybe their only advertising is word of mouth? I just wish they had a branch in New Jersey - I would actually enjoy going out to eat.
Pros: ample healthy/tasty and vegetarian options
Cons: there isn't one in NJ
