Excellent Restaurant 9/19/2011

My husband and I had our anniversary dinner at Carlos Bistro the other night. It was pouring down rain and Carlos met us at our car with an umbrella. He is so kind and really cares about his customers. The food and service was excellent. We drive from north Colorado Springs to eat at this restaurant. Highly recommended!!! more

BEST of the Springs ! 4/11/2011

There are no words to express how pleasantly surprised my husband and I were with our experience. Our food was out of this world and Carlos was so welcoming and couldn't have been nicer. We look forward to many, many return trips. Spectacular! more

Is 5 the Highest rating I can give? 4/27/2010

Carlos himself greeted us outside the door with a warm welcome. Inside, the atmosphere was relaxed and welcoming. We started off with Calamari, and after moving here from the California coast, I can safely say this is the best I have EVER had. I had one of the filets and it was tender enough to cut with a fork and melted in your mouth. My wife had the fish special of the night and was equally impressed. I would compare this with ""Spago"" in Vegas in terms of food qualtiy (hope that doesn't insult Carlos, meant to be a huge compliment). All in all, incredible food, great service and a warm atmosphere. We will definitely be coming back! Not a biker Bar.... Fine Cuisine 4/10/2010

My husband and I have a new favorite when it comes to occasional fine dining or taking clients out for dinner. I find places like the Peppertree nice, but the wait staff is a little stuffy and the tables too close together. We used to go to Denver for special occasions. Carlos Bistro has changed all that. I have to say that I will totally disagree with the reviewer who gave this restaurant a 3 star rating--not because of the food (which the reviewer seemed to like a lot!) but because the didn't like the atmosphere. Okay, so it might not be located at the fanciest part of town but it is totally worth the drive, the location, everything for the food and the overall atmosphere! Not Quite the Whole Package 1/7/2009

I read the reviews and heard numerous opinions, so my expectations were perhaps too high when I stepped into Carlos Bistro. Rumors of this previously being a biker bar are easy to understand when you drive up to this restaurant. There isn't a whole lot to it. At least, on the outside. A LOT of effort has gone into dressing up the inside, but the architecture is pretty rigid and does not lend itself much to such efforts. The flow of the layout and the table settings are awkward. The service is commendable. They do try. Sometimes this seems very genuine. Other times, it comes across as though the servers have been doing this for so long, it has become automatic and you feel like you are ordering at a drive-thru. Carlos has quite the flair and does bring a festive air and personal touch to the meal. It's a shame, some of his staff can't apply that first-hand lesson to their own service. The kitchen is quite accomodating to requests. An entree was made an appetizer without batting an eye and THANK GOODNESS. The evening's special lobster salad was one of the most divine things I have ever had. It was impeccably executed and beautifully plated. Traditional dishes are sometimes given twists (like Pan-Asian approaches) and new flavors are introduced. Though, some dishes are the same dishes you find at other high-end restaurants. They taste good, but are easily forgettable. The experience is a little on the pricey side, but you may want to splurge for that special occasion. It isn't quite the whole package, though. At least, not for large groups. Maybe for a more intimate evening. If you are looking for something interesting, flavorful, and fun...try the lobster salad. Pros: Carlos himself, accomodating kitchen, the lobster salad Cons: A box is still a box and I felt like I was stuck in one the whole evening more

Our favorite restaurant!!! The service alone is worth the highest rating we could give it. The wait staff are friendly and attentive and make dining a pleasure. The food is excellent with a wonderful selection. My personal favorite is the filet which is served two different ways - both superb. The cut of meat is so good that you can cut it with a fork and it melts in your mouth. Should you save room for desert, you can't do better than Carlos' bread pudding . Finally, the dinner will be made more memorable by a visit to your table from Carlos the proprietor. Carlos makes you feel very welcome and comfortable, as if you are his only guests. For my wife and I, Carlos' easily ranks with the other fine dining establishments in town. Pros: Food taste and quality, service, nice ambience more
